Loaded Nachos

Discover Cadac's delicious loaded nachos, cooked on your Carri Chef 50 BBQ this summer. This recipe is perfect for gathering all your family and friends together and enjoying a hearty meal at the campsite. Switch up this recipe by adding chicken or beef—whatever you fancy!

Ingredients
  • 2 diced red onions
  • 2 diced mixed peppers
  • 4 diced tomatoes
  • 75g of sweetcorn
  • 1 tbsp Mexican seasoning
  • 1 bag of tortilla chips
  • 150g of grated cheddar
  • 1 avocado
  • 1 garlic clove
  • Sour cream
  • Salsa
  • Rapeseed or olive oil
Instructions

Preheat your BBQ for 2-4 minutes on a medium heat using the paella pan.

Separate a handful of onion and tomato for later.

Add the onion and pepper with a drizzle of oil and cook until softened. Then add the tomatoes and fry for a further 3-4 minutes. 

Add the sweetcorn and Mexican seasoning, stir well, and cook for a further minute. Turn the heat down to low, add the tortilla chips and cheddar cheese, and place the lid on for 10 minutes or until the cheese has melted. 

In a separate dish, mash your avocado and mix the garlic with the reserved tomato and onion from earlier. You may wish to add a dash of lime, salt and pepper. 

Serve the nachos with a healthy dollop of sour cream, salsa and guacamole.

Teriyaki Salmon

Be the envy of your fellow campers with a Teriyaki salmon dish on your Cadac BBQ this summer. Using the paella pan, you can incorporate Asian flavours, so why not enjoy it with rice, noodles, or potato wedges?

Ingredients:
  • 4 salmon filets
  • Broccoli head, chopped and parboiled for 4 minutes
  • 3 thinly sliced garlic cloves
  • Finely chopped ginger
  • 300g of long-grain rice
  • 2 teaspoons of sesame oil
  • Rapeseed oil
  • 45ml of sake
  • 75ml mirin
  • 75ml of soy sauce
  • 75ml honey
  • 1 minced clove of garlic

To make the Teriyaki sauce, first mix the sake, soy, honey, mirin, and 1 minced garlic clove together in a saucepan and let it simmer on low heat until the liquid starts to reduce and thicken.

Then, remove from the heat and allow to cool completely before adding to the salmon. 

Next, preheat your BBQ for a few minutes with the paella pan in place. Fry the ginger and garlic in a little oil, then add the broccoli. Remove it from the heat when it starts to char and toss over sesame oil. 

Now cook your rice separately and keep it to one side. 

Add the salmon filets to the paella pan and cook on low heat with the lid on for 5-6 minutes. 

Serve your Salmon with the rice and broccoli.

Baked Bolognese

No matter what your age, baked Bolognese is a great dinner meal, so why not cook it at the campsite? You can create a big bowl of Bolognese to enjoy with the whole family using Cadac's chef or paella pan. If you don't fancy boiling pasta separately, why not serve it with garlic bread?

Ingredients
  • 350g of beef mince
  • 1 tsp of Italian dried herbs
  • 1 peeled and diced onions
  • Diced courgette
  • 1 diced pepper
  • 120g diced mushrooms
  • 500ml passata
  • 1 tin of chopped tomatoes
  • 150ml vegetable stock
  • 350g penne pasta
  • Grated parmesan
  • Olive oil
  • Salt and pepper

Preheat the BBQ with oil in the Chef pan or paella pan for a few minutes before adding the mince and herbs. Cook until softened and browned. 

Add the onion and fry for 2-3 minutes, then add the vegetables.

Meanwhile, cook your pasta separately.

After they have softened, add the passata, tomatoes, pasta and stock and cook for 15-18 minutes, stirring a few times during cooking. Leave the lid on for the majority of the time. 

Once the pasta is soft and the sauce has thickened, remove the dish from the heat, add grated parmesan and serve.

Sticky Ribs

Enjoy the most glorious sticky ribs on your camping trip using the Cadac Braai E BBQ. Whether you opt for Asian, American or African flavours; these ribs will surely make your taste buds tingle. Pair with a crunchy slaw and summer salad for the ultimate BBQ dish.

Ingredients:
  • 500g of pork, beef or lamb ribs
  • 1 cup tomato sauce
  • ½ cup oil
  • 1 cup of honey
  • 2 crushed cloves of garlic
  • 1 tablespoon of salt
  • ½ a lemon
  • 1 bay leaf

Mix the marinade together the night before for best results, and leave the ribs overnight. If you're pressed for time, an hour in the marinade will also create a delicious dish. 

Preheat the grill or pan to high heat. Place the ribs on the grill and turn the heat down to low. Cook with the lid on for 15 minutes, turning once or twice. 

Uncover the lid and cook for a further few minutes until the ribs appear crispy and the sauce shiny. 

Your ribs are now ready to serve, why not add potatoes and coleslaw for the perfect alfresco meal.
